Oatmeal creme pies

Remember the Little Debbie brand Oatmeal Creme Pies? They have always been a favorite here (including for me), but I rarely buy prepackaged treats. So last night while I was working on homework Sean started baking something in the kitchen. He said it was a surprise, and didn't tell anyone what he was doing while he was in there. When he finished he came over to me with his own version of this delicious treat-made from scratch. Let me tell you that his oatmeal creme pies beat the pants off of the store brand. They are one of the most delicious treats. He made a fresh batch of chewy oatmeal cookies-they are a little crispy on the outside and soft and chewy on the inside. And then he made the creme filling from scratch, and it's perfect!

I'm so proud that Sean took the initiative to do this. He wanted one, but instead of asking me to go to the store and buy them he baked them himself. In addition, he reduced the amount of powdered sugar in the creme filling by a full cup, and you cannot even tell the difference. Wish you could try one (or three).
