Oatmeal Cake

Oh, man.  This was delicious as soon as it came out of the oven.  No need to wait for it to cool for even a minute.  

Oatmeal Cake
1 cup oatmeal, quick or reg
1.5 cups hot water
1 cup granulated sugar
1 cup brown sugar
2 eggs
1/2 cup shortening
1 tsp vanilla
1.5 cups flour
3/4 tsp cinnamon
1 tsp soda
pinch of salt

Mix oats and water; let stand for 20 minutes.
Mix sugars, eggs, shortening, and vanilla.
Add oats.
Sift together, flour, salt, soda and cinnamon.
Add to rest of ingredients; beat well.
Bake at 350 degrees for 30 minutes in a greased 9x13 pan.

*Topping

3 tbsp butter, room temp.
1 cup brown sugar
1 tsp vanilla
1/4 cup evaporated milk
1 cup nuts, chopped
1 can coconut

Mix all ingred. and crumble over cake.
Place hot cake under broiler for a few minutes until brown.

*I didn't have the evaporated milk or can coconut so for our topping I mixed 3 tablespoons of butter, 1/2 cup of brown sugar, 1 teaspoon of vanilla, 1/2 cup chopped pecans, and 1/2 cup raisins.  Then I sprinkled this all over the top of the cake, broiled until it was warm and bubbly, and served.  It was wonderful!  A glaze of 3/4 cup powdered sugar and 1 tablespoons of milk drizzled over the warm cake would be good, too.  We are going to try that next time.
