Fresh Apple Cake

Another hit from Grandma B that we made tonight.  It was warm and gooey, and so delicious with the caramel-like topping.

Fresh Apple Cake


1.5 cups vegetable oil 
2 cups sugar
3 eggs
2 tsp vanilla
3 cups flour
1 tsp salt
1 tsp soda
1 cup chopped pecans
3 cups apples (chopped; peeled)

Blend together oil, sugar, eggs and vanilla.
Sift together flour, salt & soda.
Mix with sugar mixture.
Fold in pecans and apples.

Pour into well greased & floured bundt pan (I lined the pan with parchment paper as well).
Bake 1 hour in preheated 350 degree oven.

Topping

1 cup brown sugar
1 stick butter or margarine
1/4 cup evaporated milk

Boil ingredients together for 2 minutes.
Pour over hot cake.
Let stand 1 hour before removing from pan.

Oh my goodness that looks sinful. Fantastic blueberry muffins and now you show me that cake, yikes. I'm going to have to get myself a notebook to write down all these wonderul recipes. Love you all, Mom/Grandma
